Double Coconut Peanut Granola

Sometimes a small change can make a big difference. For some reason, I eat the same thing for breakfast almost everyday. Anyone else out there do that? Let me know what you eat for breakfast! Inquiring minds want to know.

Mine is plain Greek yogurt, a dollop of roasted strawberry-rhubarb compote, and a scoop of Melissa Clark’s Double Coconut Granola. But then, a few weeks ago, as I was scrolling through instagram the talented Katia @gourmandpixels posted a photo of granola made with red skinned (aka Spanish-style) peanuts.

It was a lightbulb moment for me. My nut of choice is usually toasted salted almonds, but I really love the gentle pop of crunch you get from a Spanish peanut. Plus, as an extra bonus, peanut skins have a ton of natural antioxidants and dietary fiber.

    If I had this granola, I would be eating it for breakfast everyday too! That breakfast parfait looks wonderful. With no nuts other than peanuts, I can eat this recipe! As I haven’t this granola handy, I eat a Trader Joe’s high protein veggie burger topped with salsa or cheese (or when I am being wild and crazy, I top the burger with both!). For many years before I switched to the veggie burger, I had a slice of multi-grain toast with melted Jarlsberg. i consider it variety if I change my breakfast item once every 10 years. 😉

    So pretty! The parfait looks delicious, although I would prefer a sweet item like this as a dessert or mid-afternoon snack.
    I think that like you, most folks like sameness for breakfast.
    I like change, and just go with my whim of the day. Could be a small slice of leftover pizza, or almond butter on wheat toast with Seville orange marmalade, or dry cereal with berries, bananas and almond milk. As occasional treats, I love poached eggs Florentine, a Spanish egg while omelet, or home-made waffles with fruit and plain yogurt.
    BTW, I haven’t seen Spanish peanuts for a long time. Did you find them in bulk or packaged? Are unsalted available?

      Hi Vivian, your breakfasts sound so adventurous to me!! (and delicious too). When I am in Canada I find the Spanish peanuts at Bulk Barn. When I am down in the states I buy Planter’s in the can at the supermarket.
